CLAYTON HILLS BRUT
Bottle fermented, three years on the lees. Crisp and dry.
Mayfield, East Sussex
Organic single estate wine from one Sussex hillside. Grown, made and bottled where the grapes stood.
There is an awful lot of nonsense talked about terroir. Fine wine is made in the vineyard, not the winery. It is all about the grape, and the grape is all about the land it stood on, the weather it took, and the hands that tended it.
Ours stand on a south facing slope in the Sussex Weald, above the river, on ground that has been farmed organically for forty years. Everything in the bottle starts there.

We grow grapes and make wine on a small organic farm we have lived on for forty years. Single estate, only ever our own grapes, season by season.
Fine wine is made in the vineyard, not the winery. We pick by hand, work gently, and let each vintage become its own thing, season by season.
Come and walk the rows, meet the people who make the wine, and try the current vintages where they were grown.
A beautiful afternoon among the vines and the most honest wine tasting we have ever done. You can taste the care in every glass.

The sparkling stood up to anything we pour from Champagne, and our guests love that it is organic and grown twenty miles from the restaurant.
